  • 1 cup apple cider
  • 1 teaspoon vanilla extract

  • 1/4 cup heavy cream (filling)
  • 1 teaspoon vanilla extract (filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whisk together all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt in a medium bowl.
  3. Cream softened butter and brown sugar in a large bowl until fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in apple cider and vanilla extract until combined.
  6. Gently fold in dry ingredients until just combined.
  7. Drop tablespoon-sized mounds of dough onto prepared baking sheets, spacing them apart.
  8. Bake for 12-15 minutes until edges are golden.
  9. Cool on baking sheets for a few minutes before transferring to a wire rack.
  10. For the filling, melt butter in a saucepan, stir in brown sugar, heavy cream, and vanilla extract until smooth.
  11. Bring filling to a boil for 1 minute, stirring constantly, then let cool slightly.
  12. Spread or pipe caramel filling between two cookies to assemble the whoopie pies.

Notes

Use fresh apple cider for best flavor. Don’t overmix the dough.
