Baked Apples with Feta, Honey, and Cranberries

A delightful dessert that combines sweet and savory flavors with creamy feta, honey, and tart cranberries baked into firm apples.

  • 4 pieces Firm Apples (Honeycrisp or Granny Smith)
  • 1 cup Feta Cheese (crumbled)
  • 1/2 cup Dried Cranberries
  • 1/4 cup Honey
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Butter
  • 2 tablespoons Fresh Mint (for garnish)

Instructions

  1. Preheat the Oven to 350°F (175°C).
  2. Wash the apples under cool water, cut off the top quarter, and scoop out the core.
  3. In a mixing bowl, combine crumbled feta, dried cranberries, honey, ground cinnamon, and vanilla extract. Mix well.
  4. Generously stuff the apples with the filling.
  5. Place the stuffed apples in a baking dish and add a pat of butter on top of each.
  6. Pour a cup of water into the dish and cover with aluminum foil.
  7. Bake for 30 minutes, then remove the foil and bake for an additional 15-20 minutes until the apples are tender.
  8. Let cool slightly and garnish with fresh mint before serving.

Notes

Serve warm and consider pairing with vanilla ice cream or whipped cream.
