Banana Bread Cinnamon Rolls

  • 4 cups all-purpose flour, plus extra for dusting
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, softened (for filling)
  • 1/2 cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • 4 oz cream cheese, softened (for icing)
  • 1/4 cup unsalted butter, softened (for icing)
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Activate the Yeast: In a small bowl, combine warm milk and granulated sugar. Sprinkle the active dry yeast on top and let it sit for 5-10 minutes until foamy.
  2. Prepare the Dough: In a large mixing bowl, mash ripe bananas. Add melted butter, the foamy yeast mixture, and eggs. Mix until well combined. Gradually add flour and salt, stirring until a rough dough forms. Knead for 5-7 minutes, adding more flour as needed until smooth and elastic.
  3. First Rise: Place dough in a well-oiled bowl, cover with a towel or plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.
  4. Make the Filling: In a bowl, mix softened butter, brown sugar, and ground cinnamon until smooth.
  5. Roll Out the Dough: Punch down the risen dough, turn it onto a floured surface, and roll it into a rectangle about 1/4 inch thick.
  6. Fill and Roll: Spread the cinnamon filling over the dough evenly. Starting from one long edge, roll tightly into a log and seal the edges.
  7. Slice and Arrange: Slice the log into 12 equal pieces and place cut-side up in a greased baking dish.
  8. Second Rise: Cover the rolls with a towel and let them rise for another 30 minutes.
  9. Bake: Preheat the oven to 350°F (175°C) and bake rolls for 25-30 minutes until golden brown.
  10. Make the Cream Cheese Icing: Combine softened cream cheese, softened butter, powdered sugar, and vanilla extract in a mixing bowl and mix until smooth.
  11. Ice and Serve: Drizzle the cream cheese icing over the warm rolls and enjoy!
