Best Ever Ground Beef Orzo

A cozy and satisfying one-pot dish combining lean ground beef, orzo pasta, fresh spinach, and diced tomatoes, perfect for busy weeknights.

  • 1 pound Lean Ground Beef
  • 1 medium Onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 1 cup Orzo Pasta
  • 14.5 ounces Canned Diced Tomatoes
  • 2 cups Low-Sodium Beef Broth
  • 1 tablespoon Italian Seasoning
  • 2 cups Fresh Spinach

Instructions

  1. In a large pot or skillet over medium heat, brown the lean ground beef for about 5-7 minutes, breaking it up with a wooden spoon.
  2. Add the finely chopped onion and cook for around 3 minutes until tender, then add minced garlic and cook for 1 minute.
  3. Pour in the canned diced tomatoes (with juices) and the low-sodium beef broth. Then, add orzo pasta and Italian seasoning, stirring until well mixed.
  4. Bring to a gentle simmer, cover the pot, and cook for about 10-12 minutes, stirring occasionally until the orzo is tender.
  5. Stir in the fresh spinach until wilted, about 1-2 minutes.
  6. Serve hot, optionally topped with grated Parmesan cheese.

Notes

For added flavor, sprinkle with freshly grated Parmesan cheese or hot sauce. This can also be customized with additional vegetables or spices.
