  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease them.
  • In a small bowl, soften your cream cheese. Mix in a tablespoon of sugar and a teaspoon of vanilla extract until smooth. Set aside.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and sugar.
  • In another bowl, combine the pumpkin puree, eggs, and vegetable oil. Whisk well until the mixture is smooth and combined.
