A hearty and flavorful ground beef and sweet potatoes skillet that’s perfect for a quick weeknight dinner.

  • ½ cup onion, diced
  • 2 cloves garlic, minced
  • 3 cups sweet potatoes, cubed
  • 2 tablespoons taco seasoning
  • 1 cup water
  • 1 cup frozen corn
  • 1 poblano pepper, diced
  • 1 cup shredded cheese (optional)
  • Fresh cilantro, avocado slices, and sour cream for serving

Instructions

  1. Prep your ingredients: Dice the onion, mince the garlic, cube the sweet potatoes, and dice the poblano pepper.
  2. Cook the ground beef: Heat oil in a large skillet over medium-high heat. Add ground beef and cook until browned. Drain excess fat.
  3. Add onion and garlic: Add diced onion and minced garlic to the skillet; cook until onion is translucent, about 3-5 minutes. Stir in taco seasoning.
  4. Incorporate sweet potatoes: Add cubed sweet potatoes and water, mix, cover, and simmer for 15-20 minutes, stirring occasionally.
  5. Add corn and poblano: Stir in frozen corn and diced poblano pepper; cook for another 5-7 minutes until heated through.
  6. Melt cheese (optional): Sprinkle cheese over the top in the last few minutes of cooking to melt.
  7. Garnish and serve: Garnish with chopped cilantro, avocado slices, and sour cream before serving.
