Preheat the oven to 350°F (175°C) and prepare your muffin tin.
In a large bowl, combine the pumpkin puree, sugar, oil, and eggs; whisk until smooth.
In another bowl, whisk flour, baking soda, and pumpkin pie spice together.
Gradually fold the dry ingredients into the wet ingredients until just combined.
In a separate bowl, beat the cream cheese until smooth.
Fill muffin cups halfway with batter, add a dollop of cream cheese, then cover with more batter.
Bake for 20–25 minutes or until a toothpick comes out clean. Cool before serving.
