Blueberry Swirl Sugar Cookies

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Mix in the egg and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Roll out the dough on a floured surface into a rectangle about 1/4 inch thick.
  8. Spread the blueberry jam evenly over the dough, leaving a small border around the edges.
  9. Roll the dough tightly into a log, keeping the jam inside.
  10. Slice the log into 1/2-inch rounds and place them on the baking sheet.
  11. Bake for 12-15 minutes or until the edges are golden brown.
  12. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a beautiful presentation, consider dusting with powdered sugar before serving.
