Cheesy Spinach Stuffed Bread

A warm and gooey filled bread combining cheeses and fresh spinach, perfect as an appetizer, snack, or light meal.

  • 3 cups all-purpose flour
  • 1 cup warm water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 packet active dry yeast
  • 2 tablespoons olive oil
  • 2 cups shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Activate the Yeast: Combine warm water, sugar, and yeast in a bowl. Let sit for 5-10 minutes until frothy.
  2. Prepare the Dough: Add olive oil, flour, and salt to the yeast mixture and stir until a dough forms.
  3. Knead the Dough: Transfer to a floured surface and knead for 5 minutes until smooth and elastic.
  4. Let the Dough Rise: Place in a greased bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  5. Preheat and Prepare the Filling: Preheat oven to 375°F (190°C). Mix mozzarella, ricotta, spinach, basil, garlic powder, and onion powder in a bowl. Season with salt and pepper.
  6. Form the Bread Bites: Punch down the risen dough, divide into 6 portions, and roll each into a circle about ¼ inch thick.
  7. Add the Filling: Place a spoonful of cheese mixture on each circle, fold over, and pinch edges to seal.
  8. Bake: Place on a parchment-lined baking sheet and bake for 20-25 minutes until golden brown and puffed up.
  9. Serve Warm: Cool slightly before serving. Cut open to reveal gooey filling and enjoy!

For best texture, serve warm. Feel free to customize with your favorite herbs or add additional vegetables.
