Cherry Cheesecake Cake Roll

A delightful dessert combining the creamy flavor of cheesecake with a light cake roll, filled with fresh cherries.

  • 3 large Eggs
  • 3/4 cup Sugar
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 8 oz Cream Cheese, room temperature
  • 1/2 cup Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup Cherries, chopped
  • Powdered Sugar, for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a mixing bowl, beat the eggs and 3/4 cup sugar until thick and pale, about 5 minutes.
  3. Gently fold in flour, baking powder, and salt without over-mixing.
  4. Pour the batter onto the prepared baking sheet and spread evenly.
  5. Bake for 12-15 minutes until golden brown.
  6. Let the cake cool slightly, then roll it up in a clean towel dusted with powdered sugar and allow it to cool completely.
  7. In another bowl, beat cream cheese and 1/2 cup sugar until smooth; mix in vanilla. Fold in chopped cherries.
  8. Unroll the cooled cake and spread the cream cheese filling evenly. Roll the cake back up, seam side down.
  9. Dust with powdered sugar before serving.

Notes

Best served chilled. Great for special occasions or a sweet treat.
