Chocolate Cupcakes

Deliciously rich and moist chocolate cupcakes, perfect for any celebration or sweet craving.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup boiling water
  • Mini marshmallows (for topping)
  • Chocolate frosting (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with cupcake liners.
  3. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. In another bowl, mix together the vegetable oil, buttermilk, eggs, and vanilla extract.
  5. Slowly pour the wet mixture into the dry ingredients and mix until smooth.
  6. Carefully stir in the boiling water.
  7. Fill each cupcake liner about two-thirds full with the batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow cupcakes to cool in the tin for 5-10 minutes before transferring to a wire rack.
  10. Frost with chocolate frosting and top with mini marshmallows.
