Chocolate Whoopie Pies

Delightful chocolate sandwich cookies filled with a creamy filling, perfect for any chocolate lover.

  • 1 cup Granulated Sugar
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Coarse Kosher Salt
  • 1 tablespoon Instant Espresso Powder (optional)
  • 2 large Eggs
  • 1 cup Whole Milk
  • 1/2 cup Full-Fat Sour Cream
  • 1/2 cup Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Unsalted Butter
  • 2 cups Powdered Sugar
  • 2 tablespoons Meringue Powder (optional)
  • 1/4 teaspoon Extra Coarse Kosher Salt
  • 1 teaspoon Additional Vanilla Extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, coarse salt, and espresso powder if using.
  3. In a separate bowl, whisk together the eggs, whole milk, sour cream, vegetable oil, and vanilla extract until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined.
  5. Portion mounds of batter onto prepared baking sheets, leaving space between each.
  6. Bake for 10-12 minutes until cookies are set and spring back when touched.
  7. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. For the filling, beat the unsalted butter and powdered sugar until light and fluffy, then add meringue powder, extra salt, and vanilla extract and mix until creamy.
  9. Assemble the whoopie pies by spreading filling on the bottom of one cookie and topping it with another cookie.
  10. Serve immediately or store in an airtight container at room temperature.

Notes

Can customize the filling with different flavors or add sprinkles for a festive touch.
