Cocoa Ribbon Cookies

  • 8 tablespoons Unsalted butter (softened)
  • 3 ounces Dark chocolate (melted)
  • 5 medium Oranges (zest and juice)
  • 1 cup Granulated sugar
  • 1/2 teaspoon Kosher salt
  • 1/4 cup Extra-virgin olive oil
  • 1/4 cup Sour cream
  • 2 cups All-purpose flour (divided)
  • 2 tablespoons Dutch-processed cocoa powder
  • 4 ounces Dark chocolate (melted for drizzling)
  • 1 tablespoon Granulated sugar (for topping)
  • Flaky salt (for sprinkling)
  • 1/4 medium Orange (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream the softened butter until creamy.
  3. Gradually add the granulated sugar to the butter and mix until smooth.
  4. Melt the dark chocolate and mix it into the butter mixture.
  5. Zest three oranges and add the juice from two; incorporate into the mixture.
  6. Stir in olive oil and sour cream until well combined.
  7. In another bowl, whisk together the flour (reserve 1/2 cup), cocoa powder, and salt.
  8. Gradually mix dry ingredients into the wet mixture, adjusting with reserved flour if sticky.
  9. Divide the dough and mix cocoa powder into one half.
  10. Roll out both dough halves and layer them together, rolling tightly into a log.
  11. Chill the log for about 30 minutes.
  12. Slice the log into 1/4-inch thick cookies and place them on the baking sheet.
  13. Bake for 10-12 minutes until firm but slightly soft.
  14. Drizzle melted dark chocolate over cooled cookies and sprinkle with sugar and flaky salt.
  15. Garnish with an orange slice for presentation.

Notes

These cookies can be stored at room temperature for up to a week or frozen for up to three months.
