  • 1/2 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar in a mixing bowl for 2-3 minutes until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, mix together the cornmeal, all-purpose flour, baking powder, and salt.
  5. Gradually combine the dry ingredients with the wet mixture, mixing until just combined.
  6. Line a baking sheet with parchment paper.
  7. Drop spoonfuls of cookie dough onto the prepared baking sheet, leaving space between each.
  8. Bake for 12-15 minutes until slightly golden around the edges.
  9. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
