Cornbread Casserole

A comforting and delicious cornbread casserole that brings warmth to any meal. Perfect as a side dish or a stand-alone meal.

  • 1 box (8.5 oz) Jiffy corn muffin mix
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) creamed corn
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup granulated sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, whisk the eggs until blended.
  3. Add the melted butter, sour cream, and granulated sugar (if using) to the eggs, mixing until well combined.
  4. Stir in the Jiffy corn muffin mix, whole kernel corn, and creamed corn gently until evenly incorporated.
  5. Pour the mixture into the prepared baking dish and spread it out evenly.
  6. Bake for 45-50 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the casserole to cool for 5-10 minutes before serving.
