Cowboy Cornbread Casserole

A delightful dish combining the heartiness of traditional cowboy cooking with comforting cornbread, featuring ground beef, beans, corn, and a cheesy topping.

  • 1 lb ground beef
  • 1 cup chopped onions
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 large eggs
  • 1 package cornbread mix
  • 1 cup shredded cheese (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the ground beef and chopped onions until the beef is browned, about 5-7 minutes. Drain excess fat.
  3. Stir in black beans, corn, diced tomatoes, and taco seasoning into the cooked meat mixture. Mix well and remove from heat.
  4. In a separate bowl, combine cornbread mix, milk, and eggs until smooth.
  5. Spread the meat mixture evenly in a greased baking dish, then pour the cornbread batter over it.
  6. Sprinkle shredded cheese over the cornbread batter.
  7. Bake in the preheated oven for 25-30 minutes until golden brown.
  8. Let the casserole cool for a few minutes before slicing and serving.

Notes

Serve with garnishes like cilantro, diced avocados, or sour cream. Pairs well with salad or tortilla chips.
