  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes (canned)
  • 1 cup shredded mozzarella cheese
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup uncooked pasta (optional)
  • Instructions

  • In the bottom of your slow cooker, add the chicken breasts along with diced tomatoes, chicken broth, diced carrots, diced celery, garlic, and Italian seasoning. Ensure everything is well mixed.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours. The chicken should be fully cooked and easy to shred when done.
  • Once the chicken is cooked, use two forks to shred it directly in the crockpot. Stir well to combine.
  • Stir in the heavy cream and shredded mozzarella cheese until melted and incorporated. If you wish to add pasta, cook it separately according to package instructions. Drain and add it to the soup.
  • Allow the soup to cook on low for an additional 30 minutes. Taste and adjust seasoning with salt and pepper as needed.
  • Serve hot, garnished with additional cheese or fresh basil if desired.
