1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
3 medium potatoes, diced
2 carrots, diced
4 cups beef broth
1 cup heavy cream
1 cup shredded cheddar cheese
Salt and pepper to taste
In a large pot or Dutch oven over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
Stir in the diced onion, garlic, potatoes, and carrots. Cook for an additional 5-7 minutes, until the vegetables begin to soften.
Add the beef broth to the pot, bring the mixture to a simmer, and let it cook for 15 minutes or until the potatoes are tender.
Reduce heat to low and slowly stir in the heavy cream and shredded cheddar cheese. Mix until the cheese fully melts.
Season the soup with salt and pepper as needed. If you want a bit more kick, consider adding a dash of hot sauce!
