Creamy Pesto Pasta

A delightful and simple recipe combining fresh basil and creamy richness, perfect for a quick dinner or an impressive guest meal.

  • 8 oz pasta (such as penne or fettuccine)
  • 1 cup fresh basil leaves
  • 1/2 cup grated parmesan cheese
  • 1/2 cup heavy cream
  • 2 cloves garlic
  • 1/4 cup pine nuts (optional)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Cook the pasta according to the package instructions with a pinch of salt. Drain and set aside.
  2. In a food processor, combine basil, parmesan, garlic, and pine nuts (if using) and pulse until finely chopped.
  3. While blending, drizzle in olive oil until a smooth pesto forms.
  4. In a skillet over medium heat, combine heavy cream and pesto, stirring gently to mix while heating through.
  5. Add the drained pasta to the skillet, tossing it gently with the creamy pesto to coat.
  6. Season with salt and pepper, and garnish with extra parmesan or fresh basil before serving warm.

Notes

For added protein, consider including grilled chicken or shrimp. Adjust the cream as needed for desired consistency.
