Creamy Summer Squash Casserole

A delightful and creamy casserole featuring fresh summer squash, onions, and cheese, perfect for family dinners or potlucks.

  • 2 medium summer squash, sliced
  • 1 medium onion, chopped
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 cup sour cream
  • 1 cup breadcrumbs
  • 1/4 cup butter, melted
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat oil over medium heat, then sauté chopped onions and sliced summer squash for 5-7 minutes until soft.
  3. In a large mixing bowl, combine sautéed squash and onions with shredded cheese, sour cream, garlic powder, salt, and pepper. Stir until creamy and well combined.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. For the topping, mix breadcrumbs with melted butter and sprinkle it over the casserole.
  6. Bake for 30-35 minutes or until golden-brown and bubbly.
  7. Let cool slightly before serving.
