Creamy Sun Dried Tomato Chicken Soup

  • 1 lb boneless chicken thighs or breasts
  • 1 cup sun-dried tomatoes, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach or kale
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Instructions

  • In a large pot, heat the olive oil over medium heat. Season the chicken with salt and pepper. Add the chicken and sauté until browned, about 6-7 minutes per side. Remove from pot and let cool before shredding.
  • In the same pot, add a bit more olive oil if necessary. Add diced onion and sauté until translucent, about 2-3 minutes. Add minced garlic and chopped sun-dried tomatoes, cooking for an additional minute.
  • Pour in the chicken broth and scrape the bottom of the pot. Bring to a simmer.
  • Lower the heat and stir in the heavy cream. Mix well to combine flavors.
  • Add the shredded chicken and spinach or kale. Stir until the greens are wilted, about 2-3 minutes.
  • Taste soup and adjust seasoning if necessary. Serve in bowls and garnish with additional sun-dried tomatoes or basil.
