1 lb boneless chicken thighs or breasts
1 cup sun-dried tomatoes, chopped
4 cups chicken broth
1 cup heavy cream
2 cups fresh spinach or kale
1 onion, diced
3 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
In a large pot, heat the olive oil over medium heat. Season the chicken with salt and pepper. Add the chicken and sauté until browned, about 6-7 minutes per side. Remove from pot and let cool before shredding.
In the same pot, add a bit more olive oil if necessary. Add diced onion and sauté until translucent, about 2-3 minutes. Add minced garlic and chopped sun-dried tomatoes, cooking for an additional minute.
Pour in the chicken broth and scrape the bottom of the pot. Bring to a simmer.
Lower the heat and stir in the heavy cream. Mix well to combine flavors.
Add the shredded chicken and spinach or kale. Stir until the greens are wilted, about 2-3 minutes.
Taste soup and adjust seasoning if necessary. Serve in bowls and garnish with additional sun-dried tomatoes or basil.
