Crispy Air Fryer Hanukkah Latkes

Delightful crispy potato pancakes made in an air fryer for a healthier take on a Hanukkah tradition.

Ingredients

  • 4 medium Russet potatoes (peeled and grated)
  • 0.5 medium Yellow onion (peeled and grated)
  • 2 large eggs
  • 0.25 cup Matzo meal (can substitute with breadcrumbs)
  • 2 teaspoons Kosher salt
  • 0.5 teaspoon Freshly ground black pepper
  • As needed cooking spray (for air fryer)
  • 1 cup Sour cream (can substitute with Greek yogurt)
  • 1 cup Applesauce

Instructions

  1. Peel and grate the potatoes and onion; combine in a large mixing bowl.
  2. Squeeze out excess moisture from the grated potatoes using a kitchen towel.
  3. Mix in the grated onion with the potatoes.
  4. Add the eggs, Matzo meal, salt, and pepper to the bowl and mix well.
  5. Preheat the air fryer to 375°F (190°C).
  6. Shape the mixture into patties and place them on a plate.
  7. Spray the air fryer basket with cooking spray.
  8. Arrange the patties in a single layer in the basket and spray the tops with cooking spray.
  9. Air fry for 15-20 minutes, flipping halfway, until golden and crispy.
  10. Serve warm with sour cream and applesauce.

Notes

For best results, squeeze out all moisture from the potatoes and do not overcrowd the air fryer.
