Crispy Beef Taquitos Rolls

Deliciously crispy beef taquitos filled with tender ground beef, zesty seasonings, and melted cheese, perfect for dinner or as party appetizers.

  • 1 lb Ground Beef (or shredded cooked beef)
  • 1 medium Onion (finely diced)
  • 2 cloves Garlic (minced)
  • 1 tbsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Dried Oregano (optional)
  • Salt, to taste
  • Black Pepper, to taste
  • 1 cup Tomato Sauce or Salsa
  • 1 cup Shredded Cheese (Cheddar, Monterey Jack, or Mexican Blend)
  • 12 Corn Tortillas
  • Vegetable Oil (or cooking spray for baking/air frying)
  • Guacamole (for dipping)
  • Sour Cream
  • Salsa
  • Shredded Lettuce
  • Diced Tomatoes
  • Chopped Cilantro

Instructions

  1. Prepare the Beef Filling: Heat a skillet over medium heat, add ground beef and cook until browned. Add onion and garlic; cook until onion is translucent.
  2. Season the Beef: Add chili powder, cumin, paprika, oregano (if using), salt, black pepper, and tomato sauce/salsa. Simmer for 5 minutes, then mix in shredded cheese until melted.
  3. Prepare the Tortillas: Heat tortillas to make them soft and manageable for rolling.
  4. Assemble the Taquitos: Place a spoonful of the filling on one edge of a tortilla, roll tightly, and repeat.
  5. Cook the Taquitos: Fry in heated oil for 3-4 minutes per side until golden and crispy, or bake at 425°F (220°C) for 15-20 minutes until crispy.
  6. Serve: Drain fried taquitos on paper towels, serve hot with guacamole, sour cream, and salsa, garnished with lettuce, tomatoes, and cilantro.

Notes

Store leftovers in an airtight container for 3-4 days in the refrigerator, or freeze for 2-3 months. Reheat in the oven at 375°F (190°C) for 10-15 minutes.
