1 lb Ground beef or turkey
2 medium Potatoes (diced)
1 cup Carrots (sliced)
1 medium Onion (chopped)
4 cups Beef broth
2 cups Processed cheese or cheddar
1 cup Milk or cream
1 tsp Garlic powder
Lid seasoning blend (optional) to taste
Brown your meat: In a large skillet over medium heat, brown your ground beef or turkey until fully cooked. Drain any excess fat and set aside.
Add to crock pot: Transfer the browned meat to your crock pot. Add the diced potatoes, sliced carrots, chopped onion, garlic powder, and beef broth.
Season to taste: If using additional seasonings like Italian or taco seasoning, sprinkle them in now. Stir well to combine all ingredients.
Cook low and slow: Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours. The longer it cooks, the more flavorful the soup will be.
Mix in dairy: About 30 minutes before serving, stir in the processed cheese or cheddar and milk/cream. Allow it to melt and blend into the soup.
Serve hot: Once melted and warmed through, ladle the soup into bowls. Top with your favorite garnishes like crispy bacon bits, green onions, or a sprinkle of cheese.
