1 lb Italian sausage (link or ground)
2 cups kale, chopped
3 medium potatoes (Yukon Gold or Russet), diced
1 cup heavy cream
4 cups chicken broth
Salt and pepper to taste
Oregano to taste
Grated Parmesan cheese for serving

Prep your ingredients: Wash and chop your kale, dice your potatoes, and slice your sausage into bite-sized pieces.
Sauté the sausage: In a skillet, cook the sausage over medium heat until it’s browned, about 5-7 minutes.
Add to the crockpot: Layer sautéed sausage, potatoes, and kale in the crockpot.
Pour in the broth: Add chicken broth to cover the ingredients, followed by spices.
Cooking time: Set crockpot to low for 6-8 hours or high for 3-4 hours.
Finishing touches: About 30 minutes before serving, pour in the heavy cream and stir.
Serve: Ladle the soup into bowls and garnish with cheese and red pepper flakes.
