1 lb ground beef
1 can (15 oz) black beans, drained
1 can (15 oz) corn, drained
1 can (28 oz) diced tomatoes
1 packet taco seasoning
2 cups beef or vegetable broth

Brown the Meat: In a large pot over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).
Add Aromatics: Once the meat is cooked, add in diced onions and bell peppers. Sauté until soft (about 3-4 minutes).
Mix in Spices: Stir in the taco seasoning, mixing well to coat the meat and vegetables.
Add Tomatoes and Beans: Pour in the diced tomatoes, drained black beans, and corn. Stir to combine everything evenly.
Pour in Broth: Add the broth, bringing the mixture to a simmer. Allow it to cook uncovered for 10-15 minutes, stirring occasionally.
Taste and Adjust: Taste your soup and adjust spices as needed. If it’s too thick, add more broth or water.
Serve Hot: Ladle soup into bowls and garnish with your choice of toppings, such as shredded cheese, sour cream, jalapeños, or cilantro.
