Cucumber Salad with Crab Meat

  • 8 ounces Imitation Crab Meat
  • 1/2 cup Mayo
  • 2 tablespoons Vinegar
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Sugar
  • To taste Pepper
  • To taste Sesame Seeds or Fresh Herbs

Instructions

  1. Wash and pat dry the Persian cucumbers, then slice them into thin rounds or half-moons.
  2. In a large mixing bowl, break up the imitation crab meat into smaller pieces.
  3. Gently add the sliced cucumbers to the bowl with the crab meat.
  4. In a separate bowl, mix mayo, vinegar, garlic powder, sugar, and a pinch of pepper to create the dressing.
  5. Drizzle the dressing over the cucumber and crab mixture, covering evenly.
  6. Gently toss the salad with a spoon or spatula.
  7. Sprinkle sesame seeds or fresh herbs on top of the salad.
  8. Chill in the refrigerator for 20-30 minutes if desired.
  9. Serve in bowls and enjoy as a light lunch or side dish.
