Delicious Blueberry Cheesecake Tacos

A fun and unique dessert that combines creamy cheesecake and fresh blueberries wrapped in crispy tortillas.

  • 6 large Flour Tortillas
  • 1 tablespoon Light Brown Sugar
  • 1 cup Vegetable Oil
  • 2 cups Fresh Blueberries
  • 1/2 cup Granulated Sugar
  • 1/2 cup Water
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Lemon Zest
  • 1 tablespoon Cornstarch
  • 1 cup Heavy Whipping Cream
  • 8 oz Cream Cheese
  • 1/2 cup Powdered Sugar

Instructions

  1. Make the Blueberry Sauce: In a saucepan, combine blueberries, granulated sugar, water, lemon juice, lemon zest, and cornstarch. Cook over medium heat for 5-10 minutes until thickened.
  2. Prepare the Tortillas: Heat vegetable oil in a large frying pan, then fry each tortilla until golden brown. Shape them into taco shells while warm.
  3. Make the Cheesecake Filling: Beat cream cheese until smooth; gradually add powdered sugar. Whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  4. Assemble the Tacos: Fill each tortilla with cheesecake filling, drizzle blueberry sauce, and top with extra blueberries. Serve immediately.

Notes

Store components separately to keep tortillas from getting soggy. Use fresh or frozen blueberries as preferred.
