Delicious Thai Shrimp in a Blanket

A delightful and crispy treat that combines marinated shrimp with the crunch of fried spring roll wrappers, perfect for appetizers or snacks.

  • 1 pound Large Shrimp (Peeled, deveined, with tails on)
  • 3 cloves Minced Garlic (Fresh preferred)
  • 2 tablespoons Oyster Sauce (Or soy sauce for a vegetarian option)
  • 1 tablespoon Soy Sauce (Low-sodium recommended)
  • 1 teaspoon Sugar (Can be omitted for less sweetness)
  • 1/2 teaspoon Ground White Pepper (Black pepper can be substituted)
  • 1 tablespoon Sesame Oil (Olive oil can be a substitute)
  • 12 pieces Spring Roll Wrappers (Cut into thirds)
  • 1 large Egg (For sealing the wrappers)
  • Oil for Frying (Any neutral oil works well)
  • 1 cup Sweet Chili Sauce (For dipping)

Instructions

  1. Prepare the Shrimp: Wash shrimp under cold water and pat dry.
  2. Make the Flavor Mixture: In a bowl, combine garlic, oyster sauce, soy sauce, sugar, white pepper, and sesame oil. Mix well.
  3. Marinate the Shrimp: Add shrimp to the mixture, coat well, cover, and marinate for at least 15 minutes.
  4. Prepare Your Wrappers: Cut spring roll wrappers into thirds and lay out for assembly.
  5. Wrap the Shrimp: Place a shrimp on a wrapper, fold over, seal with egg.
  6. Heat the Oil: Heat oil to 350°F (175°C).
  7. Fry the Wrapped Shrimp: Fry wrapped shrimp for 2-3 minutes on each side until golden brown.
  8. Repeat the Process: Remove cooked shrimp to a paper towel-lined plate and fry remaining shrimp.
  9. Serve: Arrange shrimp on a platter and serve warm with sweet chili sauce.

Notes

For a healthier option, consider baking instead of frying. Preheat the oven to 400°F (200°C) and bake for 15-20 minutes.
