  • 3/4 cup Brown Sugar
  • 2 large Eggs
  • 1/2 cup Heavy Cream
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Ginger
  • 1 batch Pie Crusts (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the pie crusts, cutting them into circles to fit mini muffin tins.
  3. In a medium-sized mixing bowl, combine pumpkin puree, brown sugar, and eggs; mix until well combined.
  4. Add heavy cream, cinnamon, nutmeg, and ginger; mix until smooth and creamy.
  5. Spoon the pumpkin mixture into each mini crust, filling them 3/4 full.
  6. Bake for 20-25 minutes until the filling is set.
  7. Let cool for 10 minutes in the tin, then transfer to a wire rack to cool completely.
  8. Serve plain or with whipped cream and a sprinkle of cinnamon.
