1 lb. chicken sausage (sliced)
1 cup carrots (diced)
1 cup celery (diced)
1 cup spinach (fresh or frozen)
4 cups chicken broth
1 teaspoon Italian seasoning
Salt and pepper to taste
Prepare your ingredients by slicing the chicken sausage and dicing the carrots and celery. Set aside.
Heat a large pot or Dutch oven with a tablespoon of olive oil over medium heat. Add the sliced sausage and cook until browned (about 5 minutes).
Stir in the diced carrots and celery, cooking for an additional 3-4 minutes until they start to soften.
Add the chicken broth, Italian seasoning, salt, and pepper to the pot. Bring to a simmer.
Stir in the spinach and let it cook for another 5-7 minutes to meld the flavors.
