1 lb spicy sausage
3 medium potatoes, diced
1 onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 cup diced tomatoes
1 tsp red pepper flakes
Salt and pepper to taste
2 cups spinach or kale
Brown the sausage in a large pot over medium heat, cooking until it’s browned, about 5-7 minutes.
Stir in the chopped onion and minced garlic, cooking until the onion is translucent, approximately 3-4 minutes.
Add the diced potatoes and cook for another 2-3 minutes before adding the diced tomatoes.
Pour in the chicken broth and bring the mixture to a gentle boil.
Sprinkle in red pepper flakes, salt, and pepper. Taste and adjust seasoning if necessary.
Lower the heat and allow the soup to simmer for about 20-25 minutes until the potatoes are fork-tender.
Stir in your choice of greens like spinach or kale during the last 5 minutes of cooking.
Serve warm, garnished with fresh herbs and accompanied by crusty bread or a side salad.
