Easy Spinach and Feta Patties

Delightful spinach and feta patties, perfect for a snack, appetizer, or side dish, packed with greens and flavor.

  • 2 cups fresh spinach, chopped (or use frozen spinach, thawed and drained)
  • 1 cup crumbled feta cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs (substitute with gluten-free breadcrumbs if needed)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil (for greasing)
  • 1 tbsp olive oil (for brushing the patties)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet.
  2. In a large mixing bowl, combine spinach, feta, onion, garlic, egg, breadcrumbs, Parmesan (if using), oregano, salt, and pepper.
  3. Shape the mixture into small patties about 2-3 inches in diameter and place them on the baking sheet.
  4. Brush the tops of the patties with olive oil for crispiness.
  5. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  6. Allow to cool slightly before serving.

Notes

These patties can be served warm or cold and are great with dipping sauces or in sandwiches.
