Easy Tuscan Soup

A warm and comforting Italian soup with Italian sausage, fresh kale, and creamy potatoes.

Ingredients

  • 1 pound Italian sausage
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 4 medium potatoes, thinly sliced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the Italian sausage until browned and fully cooked, about 5-7 minutes. Remove and set aside.
  2. Sauté the chopped onion in the same pot until translucent, about 3-4 minutes. Add minced garlic and cook for another minute.
  3. Pour in the chicken broth and bring to a boil. Add thinly sliced potatoes and simmer for 10-12 minutes until tender.
  4. Return the cooked sausage to the pot and add chopped kale. Simmer for another 5 minutes.
  5. Stir in heavy cream, season with salt and pepper, and add crushed red pepper flakes if desired. Heat through for an additional 2-3 minutes before serving.

Notes

This soup can be made ahead of time and tastes even better the next day. It’s easily customizable for vegetarian options.
