2 cans (15 oz each) white beans (cannellini or great northern)
4 cups vegetable broth
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
2 cups kale or spinach
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons olive oil
Heat the olive oil in a large pot over medium heat. Add diced onions and sauté for about 3-5 minutes until they become translucent.
Stir in minced garlic and cook for an additional minute until fragrant.
Add the diced carrots and celery, and sauté for 5-7 minutes until they start to soften.
