Garlic Herb Roasted Potatoes, Carrots, and Zucchini

A delightful side dish combining earthy potatoes, sweet carrots, and fresh zucchini, enhanced with garlic and herbs, perfect for any occasion.

  • 3 medium potatoes, diced
  • 2 large carrots, sliced
  • 2 medium zucchinis, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the diced potatoes, sliced carrots, and zucchini.
  4. Add olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper; mix until vegetables are coated.
  5. Transfer the mixture to the prepared baking sheet, spreading it out in a single layer.
  6. Roast in the oven for 25-30 minutes, stirring halfway through.
  7. Once tender and golden brown, garnish with fresh parsley before serving.
