Golden Tomato Fritters

Delicious and easy-to-make golden tomato fritters that are crispy on the outside and soft on the inside, perfect as an appetizer or side dish.

  • 2 cups ripe tomatoes, chopped
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 2 large eggs
  • Oil for frying

Instructions

  1. In a large bowl, combine chopped tomatoes, cornmeal, all-purpose flour, baking powder, salt, and black pepper. Mix well.
  2. Add chopped green onions and cilantro, stirring until evenly distributed.
  3. Beat the eggs in a separate bowl and then pour them into the fritter mixture, stirring gently to combine.
  4. Heat oil in a frying pan over medium heat until hot.
  5. Drop spoonfuls of the batter into the hot oil, frying until golden brown on both sides (about 3-4 minutes each).
  6. Remove fritters from the oil and place them on paper towels to drain excess oil. Serve warm.

Notes

Serve with tangy dipping sauces or alongside salads for a delicious meal. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months.
