1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup maple syrup
2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract
Preheat the oven to 350°F (175°C).
In a large mixing bowl, cream the softened butter together with brown sugar and maple syrup until light and fluffy.
Beat in the egg and vanilla extract until well combined.

Using a cookie scoop or tablespoon, drop rounded balls of dough onto a parchment-lined baking sheet.
Bake for 10-12 minutes, or until the edges are lightly golden but the center still looks slightly underbaked.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
