Ground Turkey Taco Casserole

A delightful and easy dish that combines healthy ingredients like lean ground turkey, colorful vegetables, and nutritious beans in a comforting one-pan casserole.

  • 1 Tbsp avocado oil (or olive oil)
  • 1 yellow onion, diced
  • 1 lb ground turkey
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 3 Tbsp chili powder
  • 2 cups chicken broth
  • 1 cup salsa
  • ⅔ cup white rice
  • 1 (15-oz) can black beans, drained
  • 1 (7-oz) can green chilis
  • 1 tsp sea salt (to taste)
  • 3 cups grated colby jack cheese
  • 1 ripe avocado, sliced
  • 3 stalks green onion, chopped
  • ½ cup sour cream
  • ½ cup to 1 cup salsa (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spray a 13” x 9” casserole dish with cooking spray.
  3. In a large skillet, heat the avocado oil over medium heat and sauté the diced onion for 3-5 minutes until translucent.
  4. Add the ground turkey and cook, breaking it apart, until no longer pink, seasoning with sea salt.
  5. In your prepared baking dish, combine the bell pepper, garlic, chili powder, chicken broth, salsa, white rice, black beans, and green chilis; stir well.
  6. Add the cooked turkey to the baking dish and mix everything together.
  7. Spread grated colby jack cheese evenly on top.
  8. Cover with foil and bake for about 45 minutes.
  9. Remove foil and broil for 5-8 minutes until the cheese is bubbly and golden brown.
  10. Let cool briefly before serving, topping with sliced avocado, chopped green onion, sour cream, and extra salsa.

Notes

Fresh ingredients and adjustable spices can enhance flavors. Consider cooking rice separately for better texture or substituting proteins as desired.
