1 lb Ground Turkey
1 medium Onion, chopped
2 cloves Garlic, minced
2 medium Carrots, diced
2 stalks Celery, diced
4 cups Vegetable or Chicken Broth
1 can Diced Tomatoes
1 teaspoon Italian Seasoning
Salt and Pepper to taste
1 cup Spinach or Kale, chopped
Heat a pot over medium heat and add a splash of olive oil.
Cook the turkey until browned, breaking it apart with a spoon for about 5-7 minutes.
Add chopped onions and minced garlic, cooking until translucent (3-4 minutes).
Toss in carrots and celery, sauté for an additional 5 minutes.
