Healthy Greek Stuffed Peppers

  • 4 large bell peppers
  • 1 cup cooked chickpeas
  • 1 pound ground beef
  • 1 cup feta cheese, crumbled
  • 1/2 cup tzatziki sauce
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat a little olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent (about 4-5 minutes).
  4. Add the ground beef to the skillet, breaking it apart with a wooden spoon. Add dried oregano, salt, and pepper, cooking until the beef is browned and cooked through.
  5. Stir in the cooked chickpeas and half of the crumbled feta cheese.
  6. Fill each bell pepper with the beef and chickpea mixture.
  7. Place the stuffed peppers in a baking dish, top with remaining feta cheese, cover with aluminum foil, and bake for 25-30 minutes.
  8. Remove the foil and bake for an additional 10 minutes to brown the tops slightly.
  9. Allow to cool for a few minutes before serving with tzatziki sauce.

Notes

These stuffed peppers can be prepared ahead of time and are excellent for meal prep or as leftovers.
