Healthy Greek Stuffed Peppers

A nutritious and colorful dish filled with bell peppers, ground beef, chickpeas, and feta cheese, topped with tzatziki sauce.

  • 4 large bell peppers
  • 1 cup cooked chickpeas
  • 1 pound ground beef
  • 1 cup feta cheese, crumbled
  • 1/2 cup tzatziki sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 5-7 minutes.
  4. Add chickpeas, garlic powder, onion powder, salt, and pepper; stir and cook for another 5 minutes.
  5. Mix in crumbled feta cheese.
  6. Stuff each bell pepper with the beef and chickpea mixture.
  7. Place the stuffed peppers in a baking dish, cover with foil, and bake for 25-30 minutes.
  8. Remove the foil and bake for an additional 10 minutes.
  9. Serve topped with tzatziki sauce and garnish with parsley if desired.

Notes

You can customize the filling with your choice of spices or substitute ground beef with ground turkey or a vegetarian option.
