1 cup wild rice
1 lb chicken breast, diced
1 cup mushrooms, sliced
1 onion, diced
2 carrots, diced
2 celery stalks, diced
4 cups chicken broth
2 tbsp olive oil
Salt and pepper to taste
Prepare the Wild Rice: Rinse the wild rice under cold water. Boil 4 cups of water, add the wild rice, reduce heat, and simmer for 45-50 minutes until tender. Drain and set aside.
Sauté the Vegetables: In a large pot, heat olive oil. Add diced onions, carrots, and celery, sauté for 5-7 minutes until soft.
Add Mushrooms: Stir in sliced mushrooms and cook for 5 minutes until softened.
Add Chicken: Mix in diced chicken breast and season with salt and pepper. Cook for 8-10 minutes until chicken is cooked through.
Add Broth: Pour in chicken broth, bring to a boil, reduce heat, and simmer for 15 minutes.
Add Wild Rice: Stir in cooked wild rice and let simmer for 10 minutes. Adjust seasoning if necessary.
Serve: Ladle soup into bowls and serve hot, garnished with fresh herbs.
