1 cup pumpkin puree
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1/3 cup vegetable oil
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp nutmeg
Preheat your oven to 350°F (175°C). Prepare mini loaf pans by greasing them or lining them with parchment paper.
In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, and eggs until well combined. Slowly mix in the vegetable oil.
In a separate bowl, whisk together the all-purpose flour, baking soda, spices, and salt.
Gradually fold the dry mixture into the wet mixture until just combined; avoid overmixing.
In a small bowl, combine 2 tablespoons of sugar with cinnamon. Pour half of the batter into the prepared mini loaf pans, then sprinkle half of the cinnamon mixture on top. Pour the remaining batter over it and top with the remaining cinnamon mixture. Use a knife to create a swirl effect.
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let it cool in the pans for a few minutes before transferring to a wire rack.
Once cool, slice and serve your delicious mini loaves.
