Ingredients
Scale
1.5 cups tahini (room temperature)
1 teaspoon vanilla extract
0.5 teaspoon kosher salt
1.5 cups granulated sugar
0.5 cups water
1 teaspoon black sesame seeds (optional)
Instructions
Prepare the Ingredients: Gather all the ingredients on your countertop.
Make the Syrup: In a medium saucepan, combine sugar and water, heating over medium until the sugar dissolves (about 5 minutes). Cook for another 5 minutes without stirring.
Mix Tahini and Flavorings: In a large bowl, mix tahini, vanilla extract, and kosher salt until smooth.
Combine Syrup with Tahini: Carefully pour the syrup into the tahini mixture while stirring continuously to avoid lumps.
Add Black Sesame Seeds: Gently fold in black sesame seeds, if using.
Transfer to a Mold: Pour the mixture into a mold lined with parchment paper, smoothing the top.
Let It Cool: Cool at room temperature, then refrigerate for at least 2 hours until firm.
Slice and Serve: Remove from the mold, slice into squares, and serve with tea or coffee.
Notes
Use fresh tahini for better flavor and control the sweetness by adjusting the sugar amount.
