Homemade Mexican Pizza

A delicious Homemade Mexican Pizza combining crispy tortillas, seasoned beef, and melted cheese, perfect for gatherings and family dinners.

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can (16 ounces) refried beans
  • 1 can (10 ounces) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives
  • Optional: jalapeños or avocado slices

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly spray two baking sheets with non-stick spray.
  3. Arrange three tortillas on each baking sheet and bake for 3-5 minutes, flipping halfway through.
  4. In a skillet, cook the ground beef over medium heat until browned. Drain excess grease.
  5. Add taco seasoning and water to the beef; bring to a boil, then simmer for 10 minutes.
  6. Warm refried beans in a microwave-safe bowl for 1 minute.
  7. Spread a layer of refried beans on a baked tortilla, add a third of the beef mixture, and top with another tortilla.
  8. Spread red enchilada sauce on top; sprinkle with cheddar and pepper-jack cheese, diced tomatoes, green onions, and olives.
  9. Repeat with remaining tortillas to create more pizzas.
  10. Bake assembled pizzas for about 5 minutes, until cheese is melted and bubbly.
  11. Allow to cool slightly, slice, and serve warm.
