Honey Garlic Chicken Stir-Fry

A quick and flavorful stir-fry featuring tender chicken, fresh vegetables, and a sweet tangy honey-garlic sauce.

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil, divided
  • 1 tsp sesame oil
  • 1 medium zucchini, sliced
  • ½ cup chopped bell pepper
  • ½ white onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ginger, minced
  • ⅓ cup honey
  • ¼ cup low-sodium soy sauce
  • ¼ cup chicken broth
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • ¼ tsp red pepper flakes (optional)

Instructions

  1. Cut the chicken thighs into bite-sized pieces. Season with salt, pepper, and garlic powder, then coat with cornstarch.
  2. In a bowl, whisk together honey, soy sauce, chicken broth, rice vinegar, and sesame oil to create the sauce.
  3. Heat 1 tbsp of vegetable oil in a skillet or wok over medium-high heat. Stir-fry zucchini, bell pepper, and onion for 3-4 minutes, then add garlic and ginger, cooking for another 1-2 minutes.
  4. Push the vegetables to one side of the pan, add the remaining oil if needed, and cook the chicken for 5-7 minutes until golden brown.
  5. Mix the vegetables back in and pour the sauce over everything. Stir-fry for an additional 2-3 minutes until the sauce thickens.
  6. Serve over rice or noodles and enjoy!

Notes

Feel free to substitute with your choice of vegetables or protein. This recipe can easily be adjusted for sweetness and capacity based on preferences.
