Honey Glazed Carrots & Green Beans

A delightful side dish combining the sweetness of carrots and the crunch of green beans, enhanced by a delicious honey glaze.

  • 1 pound fresh carrots
  • 1 pound fresh green beans
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh parsley or toasted sesame seeds (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and trim the green beans, removing both ends. Peel the carrots and cut them into 1-inch thick pieces.
  3. In a small bowl, whisk together the olive oil, honey, balsamic vinegar, minced garlic, dried thyme, salt, and pepper.
  4. In a large bowl, combine the trimmed green beans and cut carrots, then pour the honey glaze over them. Toss to coat evenly.
  5. Transfer the glazed vegetables onto a baking sheet lined with parchment paper or aluminum foil, spreading them out in a single layer.
  6. Roast in the preheated oven for about 20 to 25 minutes until the carrots are tender and the green beans are bright green.
  7. For extra caramelization, switch to the broiler for the last 1 to 2 minutes, keeping a close eye to prevent burning.
  8. Remove from the oven and let the vegetables rest for a couple of minutes before serving. Garnish with chopped fresh parsley or toasted sesame seeds if desired.

Notes

For variations, consider adding nuts, other vegetables or a pinch of cayenne for heat.
