Irresistible Brioche French Toast Casserole with Blackberries

A warm and sweet breakfast casserole featuring buttery brioche and juicy blackberries, perfect for brunch or special occasions.

  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1/4 cup amaretto liquor or almond extract
  • 1/4 cup light-color corn syrup
  • 4 large eggs
  • 2 cups whole milk (or almond/oat milk for a dairy-free option)
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 loaf brioche or challah
  • 2 cups blackberries
  • 2 tablespoons granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish.
  3. Slice the brioche into 1-inch cubes.
  4. In a mixing bowl, whisk together brown sugar, unsalted butter, amaretto (or almond extract), corn syrup, eggs, whole milk, vanilla extract, salt, and nutmeg until smooth.
  5. Layer half of the brioche cubes in the greased baking dish, pour half of the custard over the bread, and add half of the blackberries. Repeat the process with the remaining ingredients.
  6. Cover and refrigerate for at least 1 hour or overnight.
  7. Bake for 45 to 50 minutes, or until the top is golden brown and the custard is set.
  8. In the last 10 minutes of baking, sprinkle granulated sugar on top.
  9. Let cool for 10 to 15 minutes before serving.

Notes

Use day-old bread for better absorption of the custard. You can customize with different berries or even add nuts or chocolate for extra flavor.
