Jalapeño Cheddar Tuna Melts

A delicious twist on the classic tuna sandwich, combining savory tuna, creamy cheddar cheese, and a spicy kick from jalapeños.

  • 1 (12-ounce) can solid white albacore tuna, drained
  • ⅓ cup mayonnaise
  • ¼ cup green onions, thinly sliced
  • 3 to 4 tablespoons sweet yellow corn (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon yellow mustard
  • 1 tablespoon chopped parsley
  • 1 cup shredded sharp cheddar cheese
  • 1 jalapeño, thinly sliced
  • 4 to 5 slices of your favorite bread

Instructions

  1. Prepare the Tuna Mixture: Drain the tuna and mix it with mayonnaise, green onions, corn (if using), salt, black pepper, red pepper flakes, mustard, and parsley until combined.
  2. Preheat the Oven: Preheat your oven or broiler.
  3. Butter the Bread: Spread mayonnaise on one side of each bread slice.
  4. Assemble the Sandwiches: On the unbuttered side, place cheddar cheese, add the tuna mixture, and top with remaining bread (mayonnaise side up).
  5. Broil the Sandwiches: Place on a baking sheet and broil for 2-3 minutes until cheese is melted.
  6. Add the Jalapeños: Top each sandwich with sliced jalapeños.
  7. Serve: Cut in half if desired and serve warm.

Notes

These melts can be customized with different types of cheese or breads and can be served with dipping sauces.
